When winter and spring flavours combine…
There’s no story to tell today! After all it’s hard to tell stories when you have been entertaining your infant around the clock and the only thing on your mind is sleep.
Well its sleep and food on my mind of course. While sleep maybe a distant dream for me, at least I can squeeze sometime out to cook and eat.
Here’s a perfect springtime lunch or dinner recipe. Combining winter flavour from leek and spring flavour from asparagus and lemon. It will become a favourite in your culinary repertoire.
Ingredients: 14 Cooking time: 15 minutes
- 500 gms of pasta ( I used Barilla spaghettini no.3)
- One leek (white part only), finely sliced
- Two bunches of asparagus, halved and ends trimmed
- Five to six pods of garlic, coarsely sliced
- One cup of parsley (leaves and stem), finely chopped
- 1.5 teaspoon dried oregano
- 1.5 teaspoon dried basil
- 1.5 teaspoon of cracked black pepper
- One teaspoon dried chilli flakes
- Juice of one lemon
- Five tablespoons of extra virgin olive oil (evoo)
- One stick of butter
- Salt to season
- Parmesan to garnish
Cook pasta as per packet instructions and keep aside.
In another saucepan melt a stick of butter along with one tablespoon of evoo. This stops the butter from burning. Add garlic and half a cup of parsley, cook until aromatic. Now add the leek, mix well until the leek is evenly coated with the melted butter and parsley. Cook until leek is soft and aromatic.
Now add the beautiful asparagus followed by lemon juice and mix well. Cook for three to four minutes or until asparagus is slightly tender.
I bet you can’t wait to devour this beauty! Now add the cooked pasta followed by all the dried herbs, chilli flakes, cracked pepper and the remaining evoo. Season with salt as required and toss the pasta. If you like a bit more sauce you can add two tablespoons of cooking cream.
Your quick and easy springtime delight is ready so serve. Perfect for a busy work night dinner or a lazy Sunday lunch. Garnish with grated Parmesan and serve hot, it doesn’t get better than this!
